摘 要:目的: 对某省体委4种运动项目73名运动员进行营养调查,了解硫胺素营养水平及与膳食的关系。方法: 采用称重法进行膳食调查和尿负荷实验测定尿中硫胺素含量。结果: 4种项目运动员硫胺素摄入量皆未达到推荐的参考营养密度(0.5mg/4200KJ)。尿负荷实验结果提示运动员硫胺素缺乏或不足人数占65.7%。多元回归分析提示尿硫胺素排出量与每能量单位(4200KJ)的水分、硫胺素摄入量关系较为密切(P<0.05)。结论: 提高运动员硫胺素营养水平应改进不合理的烹调方法,增加富含硫胺素的食物摄入。Objective: In order to find the relationship between thiamine levels and dietary, a nutritionalsurvey was conducted among 73 athletes in different sports items. Methods: A dietary survey wasconducted by weighting method and the content of thiamine was analyzed by urine load test. Results:The results showed that thiamine intake of athletes was inadequate and the average insufficient rate ofthiamine in four hours was 65.7%. Water and thiamine intake per 4200KJ(1000Kcalth) were introducedto multivariate regression analysis model. Conclusion: According to the survey results, suggestions aregiven for improving the nutrition among athletes.
