摘  要:对β-甲壳质及其脱乙酰衍生物的特性与α-甲壳质及其脱乙酰衍生物进行了比较研究。结果表明:红外光谱和X-衍射图谱都可以用来表征甲壳质,但只有X-衍射图谱可以区分其α和β型结构;β-壳聚糖和α-壳聚糖在高浓度(大于0.01%)时对金黄色葡萄球菌和大肠杆菌均有明显的抑菌作用,而在低浓度(0.001%)下,由于本试验所用的β-壳聚糖兼有高粘度和高脱乙酰度,抑菌作用强于α-壳聚糖。Some characteristics of β-chitin and its deacetyl derivative were studied compared with a-chitin and its deacetyl derivative. The results showed that chitin could be identified by its IR spectrum and X-ray diffraction pattern. Only the latter could distinguish two different crystal types ( α or β) ; Against Staphylococcus aureus and Escherichia coli, both β-chitosan and α-chitosan had antibiotic activity obviously when the concentrations were more than 0.01% . While the concentrations were low(0.001 % ) , β-chitosan showed stronger antibiotic activity than α-chitosan because of its high viscosity and high degree of deacetylation.
