摘  要:建立了食品中葡萄糖酸-δ-内酯的气相色谱–质谱法(GC–MS)定性、定量方法。样品用沸水提取,用乙腈沉淀蛋白,离心,取部分上清液旋干后加入吡啶和乙酸酐进行乙酰化,再以三氯甲烷提取后上机测定。葡萄糖酸-δ-内酯的含量在1~100 mg/L范围内与色谱峰面积呈良好的线性关系,线性相关系数r2=0.999 9,方法检出限为0.5mg/kg。测定结果的相对标准偏差为1.1%~1.5%(n=6),回收率在80%~107%之间。该方法具有灵敏度高、定性准确的优点,适合食品中葡萄糖酸-δ-内酯的检测。A method for qualitative and quantitative of glucono-delta-lactone in the food was developed by GC–MS. The sample was extracted with boiling water,precipitated protein with acetonitrile,then the supernatant was dried and acetylated with pyridine and acetic anhydride, at last extracted with chloroform for being detected. The content of gluconodelta-lactone had good relationship in the range of 1–100 mg/L with the peak area, the linear correlation cofficient r2=0.999 9, the detection limit was 0.5 mg/kg. The relative standard deviation of determination results was 1.1%–1.5%(n=6). The recoveries were ranged from 80%–107%. This method was suitable for detecting glucono-delta-lactone in food with advantages of high sensitivity and good ability to identify.
