摘 要:为保证农村流动厨师操办家宴卫生安全 ,对农村家宴进行了调查。农村家宴存在的主要卫生问题是 :食品加工场所条件简陋 ,达不到卫生要求 ;厨师的文化水平低 ,卫生意识差 ;食品加工操作不规范 ,不符合卫生要求 ;厨师流动性大 ,难以管理。基于农村家宴的非赢利性、一次性 ,建议制定农村自办家宴管理办法及卫生要求 ,对农村流动厨师登记造册、定期健康检查、培训卫生知识、进行现场卫生指导。提高农村家宴的卫生水平。More and more rural families in China held feasts at home for festival, marriage, birthday, funeral or celebration. In some feasts, food borne illness broke out because of sanitary problems in the process of food preparation. The main sanitary problems in rural family feasts included: (1) food processing equipment were simple and crude, (2) processing place was narrow, (3) mobile cooks knew little about food hygiene knowledge , (4) food processing methods did not meet the sanitary requirements,(5) the management of the mobile cooks was difficult because they were always migratory. The author suggests that the health administrative department should make regulations and sanitory requirements for rural family feasts,register the rural mobile cooks,examine their health status regularly, train and instruct them in food hygiene knowledge to ensure the safety of rural family feasts.
