摘　　要：食品烹调过程中 ,产生大量的油烟气 ,污染环境 ,损害人体健康 ,文中介绍各种油烟气的形成及其成分 ,饮食业油烟的排放标准和净化方法 ,旨在提供有效防治饮食业油烟气。A lot of oil gas from cooking process which polluting the environment and damaging the people′s health, must be prevented efficiently. The variety purifying methods of cooking oil gas have been introduced in this paper. It is provided for some reference to environmental administration and user to prevent efficiently cooking oil gas from the catering trade.
