摘  要: 阐述了富马酸的理化性质,提出果汁中产生富马酸的主要原因是原料果因受损或虫害而引起霉菌侵染、加工过程延时及生产线清洗不彻底,给出了对富马酸进行酶化学法定量检测的方法,并提出应采取严把原料收购质量、加大苹果清洗力度、控制烂果率、保证生产的连续化等措施,以降低果汁中的富马酸含量。The physical and chemical characteristic of Fumaric acid was introduced in this paper.When the raw fruit was damaged by bruise or insect pest and induced mould attack,the process was thus prolonged and the product line was cleaned incompletely,Fumaric acid was thus produced in concentrate juice.The main reasons were discussed.The detection method were given.The control ways of ensuring quality of raw fruit,strengthening cleaning of raw fruit and product line,ensuring the continuing of production were put forward to reduce the content of Fumaric acid in order to improve the quality of concentrate juice.
