摘  要:研究了2%壳聚糖、0 2%植酸和0 4%魔芋精粉3种涂膜液对甜瓜常温贮藏中失重率、呼吸强度及贮藏后品质的影响.结果表明:3种涂膜液处理均可明显减少果实水分蒸发,降低呼吸强度,其中魔芋精粉效果最好;0.4%魔芋精粉涂膜甜瓜,常温贮藏25d后,果实硬度、可溶性固形物含量及Vc含量最高,损失率最低,贮藏效果最佳.The effect of different coating treatments on fresh-keeping of melon at room temperature was studied,including 0.4% konjac flour, 2% chitosan and 0.2% phytic acid. The result showed that three kinds of coating treatment can significantly inhibit respiration and weight loss of fruits during storage. After 25 d of konjac flour coating, the firmness, soluble solid content and Vitamin C were very close to that in fresh melon, the rotted fruits were least. Coating with 0.4% konjac flour solution can get the best result.
