摘　　要：食品添加剂做为现代食品工业重要的科技创新推动力 ,以及其有利于食品加工保藏、增加花色品种、提高食品感官质量和营养价值的重要作用 ,越来越受到人们的重视。笔者曾在本刊 1993年第 3期上发表了“浅淡我国食品添加剂的发展” ,时至今日 ,已十年有余 ,我国食品添加剂行业发生了巨大变化 ,有感撰文“再谈我国食品添加剂的发展”。Food additives and ingredients are considered as the important power of improving scientific and technological innovation in food industry. It benefits to food preservation, increasing food species, improving food sensory quality and nutritive value. In this paper, it showed the development of Chinese food additive and ingredients industry, especially in the past ten years.
