摘 要:谷胱甘肽常采用发酵法生产,其存在于细胞内,要得到谷胱甘肽常常采用一定的破壁手段,包括化学、物理、酶等方法。本文报导了采用热水直接抽提的方法,并且采用响应面分析方法对抽提的条件进行了优化,得到优化条件:温度83℃、时间14.4min,水∶干细胞8.5mL/g,搅拌速度210r/min。与其它方法相比,该方法是一种简便、快速、经济、有效的方法。Glutathione,one of the most important biological active substance, plays a central role in metabolic pathways of live organisms. For several years, researches on medicine,food science and biology have attached great importance to the study of glutathione because of its high value. Glutathione often produced by fermentation method,because glutathione consist in cells, many techniques such as physical, chemical, enzyme methods can be used to destroy cells. A new method is studied in this paper extract glutathione with hot water.Condition to gained by response surface analysis: 83 ℃, 14.4 min, 8.5 mL/g, 210r/min. Compared with other methods, hot water extraction method proved to be a convenient, fast and effective method for the extraction of glutathione.
