摘 要:对烟曲霉植酸酶的酶学特性进行了研究。结果表明,其最适反应温度为60℃,最适pH为5.0;液态酶在70℃处理5min,残余酶活为69.12%;在4℃保存2个月,残余酶活为90%;不同金属离子和螯合剂对酶活性的影响存在差异,Fe3+,Mg2+对该植酸酶有较强的激活作用,而Zn2+,Co2+,Cu2+和EDTA有较强的抑制作用,Ca2+,Fe2+和Mn2+等对其则无明显影响。The enzymatic characteristics of phytase from Aspergillus fumigatus were studied. Results showed that the optimum temperature and pH for the phytase keeping its activity were 60℃ and 5.0, respectively. The enzyme could keep its activity of 69.12% for 5 min at 70℃, and it could keep its activity about 90% for two months at 4℃. Effects of various metal ions and chelating agents on enzyme activity were different. Fe^(3+) and Mg^(2+) could stimulate its activity, but Zn^(2+),Co^(2+),Cu^(2+),and EDTA could inhibit its activity.Ca^(2+),Fe^(2+),and Mn^(2+) had no effect on its activity,
