摘  要:随着水产品的市场全球化及其在各国和各大洲的便捷运输,尤其是地理标志性水产品在市场上的推广,错误标签水产品的分销潜力也相应增加。水产品来源的真实性成为消费者、经销商以及政府部门关注的热点。因此,开发快速、准确和可靠的水产品溯源方法成为亟待解决的关键问题。矿物元素及稳定同位素比值分析技术能够反映水产品的产地环境特征和自身饮食特征,且具有灵敏度高、可靠性强等优点逐渐成为水产品溯源的有效手段。本文综述了稳定同位素比值和矿物元素分析技术在水产品产地或生产方式的溯源研究中的应用进展,并对其发展趋势进行展望,以期为水产品溯源研究提供参考。With the market globalization of aquatic products and the convenient transportation in various countries and continents,especially the promotion of geographically iconic aquatic products in the market,the distribution potential of mislabeled aquatic products has increased accordingly.The authenticity of the source of aquatic product has become the focus of attention of consumers,distributors and government departments.Therefore,the development of rapid,accurate and reliable traceability method for aquatic products has become a key problem to be solved urgently.Mineral elements and stable isotope ratio analysis technology can reflect the environmental characteristics of aquatic products and their own dietary characteristics and has gradually become an effective means of aquatic products traceability with the advantages of high sensitivity and reliability.In this paper,the application progress of stable isotope ratio and mineral element analysis technology in the traceability research of aquatic products origin or production mode were reviewed,and its development trend was prospected,so as to provide reference for the traceability of aquatic products.
