摘　　要：透过液、糖化的检测指标,分析影响糖化液质量的因素,并分享全面看待糖化液质量的一些看法。Quality of saccharification liquid is one of the key factors of a fermentation factory performance. This article analyses the major factors affecting saccharification quality through detection indices of saccarification and liquefaction reactions. Recommend to observe the saccharification quality comprehensively instead of depending on HPLC only.
