摘 要:鱼油因富含EPA、DHA等生理活性物质,其制品越来越受到人们的关注。本文主要介绍了几种鱼油提取工艺,包括稀碱水解法、酶解法、超临界流体萃取法以及微胶囊化技术,包括锐孔-凝固浴法、喷雾干燥法、复凝聚法及包合法。分析比较几种微胶囊化方法并简述微胶囊新技术的研究进展,探讨了鱼油提取及微胶囊化技术今后的发展趋势。Fish oil is a good source of eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA) with physiological activity.More and more attentions have been attracted to the fish oil products.In this review, extraction and microencapsulation of fish oil were introduced briefly,including alkaline hydrolysis,enzymatic hydrolysis,supercritical fluid extraction(SFE),air-flow piercing device,spray drying,cocervation,molecular inclusion.Several microencapsulation of fish oil were compared and the research progresses of new microencapsulation were described.The prospect of extraction and microencapsulation of fish oil was further discussed.
