摘  要:绿豆被誉为粮油作物中的绿色珍珠,营养价值较高。本试验研究了以绿豆、绿茶、鲜鸡蛋、无水奶油等为主要原料,利用L9(34)正交试验寻求冰淇淋最佳生产配方。"绿珍珠"冰淇淋的特点是风味独特、口感细腻、色泽均匀、质地坚实、营养丰富、清爽解暑,是值得开发的冰淇淋新品种。This topic major prepare a new kind of ice - cream study on the ice - cream made of green bean and green tea. Major raw material is green bean and supplementary raw material is juice of green tea. It's made a series of scientific conduction and repeated test. Particular scent of green bean is its major smell and the scent of fresh and cool green tea is its remained odor. It has special flavor, exquisite mouth feeling, even color, solid texture, abundant nutrition . It fresh and cool, remove heat, is a new kind of ice - cream worthy of exploit.
