摘  要:目的: 探讨花生油对心血管疾病(CVD)危险性可能的保护作用。方法:用随机、四阶段交叉设计研究基础膳食(BD)、低脂肪膳食(LFD)、花生油膳食(POD)和花生油加花生膳食(POPD)对血脂的影响。结果: 与BD比较,富含单不饱和脂肪酸的POD和POPD与LFD一样,均可降低血清总胆固醇(TC)和低密度脂蛋白胆固醇(LDL-C),分别降低了1.95 %、3.32%、3.91%和6.58%、8.52%、5.43%。LFD使高密度脂蛋白胆固醇(HDL-C)降低了4.62%,甘油三酯(TG)升高了4.02%,而POD和POPD使HDL-C升高了4.62%和3.47%,且TG水平没有升高。结论: 花生油可以降低血清LDL-C水平,升高HDL-C水平,对心血管疾病危险性具有保护作用。Objective: To study the protective effect of peanut oil on risk of cardiovascular disease (CVD). Methods: A randomized, 4-periods crossover design (n = 65) was used to examine the effects of the low fat diet (LFD), peanut oil diet (POD), peanut oil+peanut diet (POPD) on serum lipids and lipoproteins in 65 persons aged 40-60 y. Results: Compared with the basic diet, the high-MUFA diets (POD, POPD) and the LFD lowered TC and LDL-C cholesterol by 1.95 %, 3.32%, 3.91% and 6.58%, 8.52%, 5.43% respectively. LFD lower HDL-C by 4.62% and elevated TG level by 4.02%; whereas the POD and POPD elevated HDL-C by 4.62% and 3.47% respectively and didnt elevate TG. Conclusion: Peanut oil has the protective effect on lowering hyperlipemia and reducing CVD risk.
