陆封型大西洋鲑肌肉营养成分分析

摘　　要：应用生化分析方法对养殖的陆封型大西洋鲑 2龄和 3龄鱼肌肉中的营养成分和蛋白质中氨基酸组成及含量进行了定量分析。结果显示 :2龄和 3龄陆封型大西洋鲑肌肉中蛋白质含量分别为 1 9 85 %和 2 0 2 0 % ;脂肪含量为 2 74%和 4 73% ;水分含量为 76 30 %和 74 74% ;灰分含量为 2 5 9%和1 95 %。陆封型大西洋鲑肌肉蛋白质中含有 1 8种氨基酸 ,总量分别为 1 7 88%和 1 8 40 % ,其中 1 0种人体必需氨基酸含量为 9 1 5 %和 9 96%。In this paper, the quantitative analysis on the nutritive compositions and amino acid contents of the two years old and three years old farming Atlantic salmon were made by the way of biochemical methods,the results showed that 2 and 3 years old salmon trout the contents of muscular protein,lipid,moisture and ash were 19.85% and 20.20%,2.74% and 4.73%,76.30% and 74.74%,2.59% and 1.95%,and in the muscular protein there were 18 kinds of amino acid,and the total content was 17.88% and 18.40%, and the contents of eight essential amino acids was 9.15% and 9.96% separately.
