摘　　要：论述了荞麦的资源分布情况,荞麦独特的营养功能以及荞麦产品在食品加工中的广泛应用。从荞麦加工工艺设计的角度,对荞麦加工工艺中的要点进行了阐述,介绍了4种荞麦脱壳机的原理和优缺点以及荞麦加工工艺流程图。The resource distribution, unique nutritional functions and food processing application of buckwheat are discussed. From the point of view of designing buckwheat processing process, some gists of buckwheat processing technology are presented, together with the principle, advantages and disadvantages of four kinds of buckwheat hullers as well as milling process flow.
