云南10种野菜胡萝卜素含量的测定

摘　　要：目的 :为了解云南野生蔬菜资源的营养成分及价值 .方法 :对 10种野生蔬菜采用国家标准分析方法纸色谱法进行胡萝卜素含量的分析测定 .结果 :10种野菜均含有丰富的胡萝卜素 ,其中小黑药中胡萝卜素含量高达 7 985 8mg/ 10 0 g .结论 :提示小黑药具有较大的开发利用价值 .Objective: To investigate the nutrient components, evaluate the nutrit ional value of 10 kinds of wild vegetables in Yunnan and provide a scientific ba sis for the wild resources. Methods: The carotene contents of wild vegetables wa s detected by means of paper chromatography which is an international standard m ethod. The results showed that 10 kinds of wild resources had rich carotene. Esp ecially in Xiaoheiyao, carotene was richer (7 985?8?mg/100?g) than in the ot her varieties. Conclusion: Xiaoheiyao has a broad prospect of development. [
