摘  要:目的 了解大学生膳食营养状况 ,探讨日常饮食习惯与尿粪黄曲霉毒素代谢物 (AFM1 )水平的关系。方法 随机抽取健康男性在校大学生 30 0名 ,进行膳食调查、体格测量、肝功能及HBsAg检测 ,并收集尿液、粪便测定黄曲霉毒素及其代谢物含量。结果 调查对象的膳食摄入基本合理 ,但奶类摄入明显不足。尿黄曲霉毒素代谢物 (AFM1 )阳性率为 47% ,尿AFM1 水平与进食种类无明显相关关系。HBsAg阳性组粪便黄曲霉毒素Q1 (AFQ1 )和AFM1 含量显著高于HBsAg阴性组。结论 调查对象的营养状况良好 ;膳食结构基本合理 ,但需增加奶类摄入。Objective To know the nutrition status and to explore the correlations between diet habits and aflatoxin metabolites in urine and feces among college students. Methods Three hundred healthy male college students were selected randomly. Dietary survey and anthropometry were carried out. The liver function and HBsAg were tested. Urine and feces samples were collected for testing. Results Except milk intakes, the intakes of diets were almost reasonable. The positive rate of AFM 1 in urine was 47%. There was no significant correlation between AFM 1 in urine and the kinds of food consumptions. AFM 1 and AFQ 1 in feces in the HBsAg(+) individuals were higher than those in the HBsAg(-) group. Conclusion The college students are in good nutrition status. Milk products should be increased in their daily diet.
