摘 要:为系统了解福建省食品中单核细胞增生李斯特菌的污染状况、分布特征以及血清型别 ,为评价和预警我省食品污染状况和制定相关食品卫生政策提供可靠的基础数据 ,根据福建省的不同地理位置和经济状况 ,选择福州、泉州、龙岩和尤溪 4个市县为监测点 ,在夏季和冬季随机采集农贸市场的 4大类样品。样品LB增菌后 ,采用科玛嘉单核细胞增生李斯特菌显色平板分离 ,做VITEK32全自动微生物鉴定系统和ListeriamonocytogenesAPI试剂条生化试验、溶血试验、小鼠毒力试验和血清学试验。 2 0 0 0年~ 2 0 0 3年对生肉、熟肉、水产品和生牛奶 4大类共 136 9份食品进行检测 ,单核细胞增生李斯特菌的总检出率为 6 14 %。不同种类食品的阳性率高低不一 ,阳性率最高为生肉 (12 4 4% ) ,水产品和生牛奶中均未检出。生肉类中阳性率最高为冻鸡肉 (38 4 6 % ) ,鲜鸡肉中未检出。 4个市县的检出率呈地区性差异 ,幅度介于 7 5 5 %~ 5 2 0 %之间。夏季和冬季的检出率差异无显著性。 30株单核细胞增生李斯特菌的血清型别以 1 2a型为主。监测结果显示福建省市售生 (冻 )畜禽肉存在着不同程度的单核细胞增生李斯特菌污染 ,应加强畜、禽类屠宰、运输、加工过程的卫生管理和监测 ,提出预防单核细胞增生李斯特菌食物中毒和加强宣传教育?To explore the extent and distribution of L. monocytogenes contamination of food products in Fujian and the serotypes of the isolates and to provide fundamental information for policy makers to work out relevant regulations and establish food safety warning system, four sentinel surveillance spots(Fuzhou, Quangzhou, Longyan and Youxi)have been chosen for surveillance according to their geographic locations and their economic level. Food samples were randomly collected in markets in winter and summer seasons. Then the collected samples were processed and inoculated in L.monocytogenes agar plates. After that, the isolates were studied by biochemical, hemolysis, mouse toxicity and serotype tests. 1 369 samples from four sorts of foods (raw meat, cooked meat, raw milk and aquatic products were collected and tested during the period 2000~2003.The overall positive rate for L.monocytogenes was 6 44%. The positive rate of L. monocytogenes in different foods varied: raw meat 12 44%, cooked meat 0 31% and L.monocytogenes were not found in samples of raw milk and aquatic products. Among various kinds of raw meats, the positive rate of L.monocytogenes in frozen chicken was the highest (38 46%)with frozen pork, beef and mutton (30 30%), fresh raw pork (4 04%),fresh raw beef (3 82%)and fresh raw mutton (1 08%) followed, and L.monocytogenes were not found in fresh raw chicken. The positive rate of L.monocytogenes in foods also showed regional diffrence and seasonal diffrence. The positive detected rate of L.monocytogenes in summer was 16 00%(52/325), while 11 52% (31/269) in winter, the difference was not significant. The serotype of 30 strains of L.monocytogenes was 1/2a chiefly.The study showed that the investigated foods in surveillance spots had been contaminated by L. monocytogenes in different degrees. So it is necessary to further strengthen the supervision and monitoring in the process of slaughtering, transportation and processing, and take measures to prevent
