优良品种香椿芽营养成分的研究

摘　　要：本文是中国研究优良品种香椿（Ｔｏｏｎａｓｉｎｅｎｓｉｓ）营养成分的首次报导。供试品种是我们十余年来选育的优良品种和从安徽省引进的几个品种，样品采自同一立地、同龄的试验林。分析了各品种芽的蛋白质、脂肪、糖、纤维素、单宁、微量元素（Ｎ、Ｐ、Ｋ、Ｃａ、Ｍｇ、Ｆｅ、Ｚｎ、Ｃｕ）、维生素（Ｃ．Ｂ１、Ｂ２）及氨基酸。用全距等分法给各项目记分，按总分数值大小排序，确定品种营养成分含量高低。次序是：红香椿、红叶椿、薹椿、黑油椿、红油椿、褐香椿、青油椿、绿香椿和桃椿。Some varieties were selected by the authors in the past ten years, some are from Anhui Province. The samples are from experimental woods of the same site and age. Protein, fats, sugar, cellucose, tannin, trace elements (N, P, K, Ca, Mg, Fe, Cu, Zn), Vitamins (B1, B2, C) and Amino acids of the provided varieties were analysed. The varieties were arranged according to the scores given by Whole-distance-equal division method. From the superior to the inferion, the order is: red Chinese toon, Brown Chinese toon, red-leaved Chinese toon, sprout Chinese toon, black-oil Chinese toon, red-oil Chinese toon,green-oil Chinese toon, green Chinese toon, and the peach Chinese toon.
