摘  要:对丁鱼岁、全雄太阳鲈、黄金鲈、大口胭脂鱼以及小鳞直齿鱼等5种国外引进鱼类的含肉率及肌肉的营养价值进行了综合评价。5种引进鱼类的含肉率大小依次为:丁鱼岁(72.4%)>大口胭脂鱼(71.9%)>黄金鲈(70.7%)>小鳞直齿鱼(61.6%)>全雄太阳鲈(53.2%)。丁鱼岁、全雄太阳鲈、黄金鲈、大口胭脂鱼和小鳞直齿鱼的蛋白质含量(占鲜样)分别为:18.85%、17.34%、18.62%、18.01%和18.29%;必需氨基酸含量(占干样)为:35.82%、37.50%、36.62%、30.11%和29.80%;EAAI为:46.91、50.10、49.22、41.16、40.21。综合评价全雄太阳鲈、黄金鲈和丁鱼岁营养价值较高,大口胭脂鱼、小鳞直齿鱼营养价值稍低。The flesh contents and nutritional compositions of Tinca tinca, ♂ Centrarchus macropterus, Perca flavescens, Ictiobus cyprinellus and Orthodon rnicrole pidoepidotus were measured and their nutritional values were evaluated. The order of flesh contents for the five introduced fishes was Tinca tinca (72. 4 %) 〉 Ictiobus cyprinellus (71.9 %) 〉Perca flavescens (70. 7 %) 〉 Orthodon microle pidoepidotus(61.6%) 〉 ♂Centrarchus macropterus (53. 2%). The protein contents (Wet) of Tinca tinca , ♂ Centrarchus macropterus , Perca flavescens , Ictiobus cyprinellus and Orthodon microle pidoepidotus were 18. 85%, 17.34%, 18. 62%, 18. 01% and 18. 29%, respectively. The contents (Dry) of essential amino acids (EAA) were 35.82%, 37. 50%, 36. 62%, 30. 11% and 29. 80%, and the EAA indexes (EAAI) were 46. 91, 50. 10, 49. 22, 41.16 and 40. 21, respectively. Considering all different parameters, nutritional values were ♂ Centrarchus macropterus 〉 Perca flavescens 〉 Tinca tinca Ictiobus cyprinellus 〉 Orthodon microle pidoepidotus.
