摘  要:目的:测定鲢鱼(Hypophthalmichthys molitrix Cuv.etVal.)蛋白酶解肽(enzymatic hydrolysis peptide,EHP)相对分子质量组成,研究其降血脂作用。方法:分别用胰蛋白酶和枯草杆菌中、酸性蛋白酶水解新鲜的鲢鱼蛋白,经离心、微孔过滤、浓缩等获得鲢鱼EHP;用高效液相色谱(HPLC)测定鲢鱼EHP的相对分子质量;饲喂SD大鼠14d后分离血清,测定TG和TC含量。结果:鲢鱼EHP相对分子质量在12500u以下,其中相对分子质量在1900u以下的小分子肽占68.5%。鲢鱼EHP降低血清TG和TC分别为38.7%和46.2%。结论:鲢鱼EHP中小分子肽比例最高,其降低高血脂大鼠血清TG和TC效果显著。Objective: To determine the relative molecular mass of enzymatic hydrolysis peptide (EHP) of silver carp (Hypophthalmichthys molitrix Cur. et Val) and study its hypolipidemic effect in rats. Methods: Trypsin, as 1.398 neutrase and acidic proteinase were applied in hydrolysis of fresh protein of silver carp, and the EHP was obtained after centrifuge, micropore filtration and concentration. HPLC was used to determine the relative molecular mass of the EHP of silver carp. The analysis of serum TG and TC contents was conducted after feeding SD rats for 14 d. Results: The relative molecular mass of the EHP of silver carp distributes below 12 500 u, and the oligopeptides with the relative molecular mass of less than l 900 u were more than 68%. The EHP of silver carp decreased the serum TG and TC 38.7% and 46.2% respectively. Conclusion: The ratio of oligopeptides was high in the EHP of silver carp, and it decreased blood lipids significantly.
