大蓟刺儿菜花红色素的提取测定及性能研究

摘  要:采用单pH测定法和pH差示法,测定了大蓟刺儿菜花红色素含量的影响因素、线性范围及适用性,对比结果单pH测定法适宜测定大蓟刺儿菜花红色素含量.以色素含量为指标,采用单pH测定法,对大蓟刺儿菜花红色素的提取及性能进行详细的研究.结果表明:大蓟刺儿菜花红色素在pH值为1.0,体积分数50%的乙醇为浸提剂,料液比为1 g∶20 mL,温度为55℃,浸提时间2.0 h为最佳提取条件.色素的色价为272,在水、乙醇中的溶解性好,对酸、热稳定,强光对色素有一定的降解作用.色素在氧化剂H2O2中稳定性较好,还原剂N a2SO3对色素有影响.The methods of one pH and differential pH were used to test the influential factors, linear limits and the suitability of the red pigment in the Cephalanoplos Segeturn. By comparing these methods, it is believed that the method of one pH was suitable for testing the red pigment contents. By taking the red pigment content as an indication, the method of one pH was used to study its extraction and properties. The results showed that the best time for extraction was when the pH was 1.0, volume percentage was 50% of alcohol, liquid substance was 1 g : 20 mL, the temperature was 55℃ for 2. 0 h. The pigment matter was 272. It was soluble in water and alcohol and steady in acids and heat. Strong light could reduce the colouring matter. It was steady in the oxidizer of H2O2 but earily influenced by Na2SO3.
