摘  要:对香菇分别在273K、283K和293K的密闭容器中氧气和二氧化碳随时间、浓度的变化进行了测定,根据酶动力学原理,利用非线性估计法、多重回归分析分别获得气体成分的变化率曲线和米式方程,从而获得相应的参数,求得反映呼吸状态的呼吸熵动态变化规律以及温度影响参数——活化能,并以此求出在任意温度、有氧呼吸气体环境条件下果蔬的最大呼吸速率,为气调包装系统设计提供理论依据。Experiments were conducted for the shiitake to measure the concentration of O2, CO2 varied by time in a closed system. The respiration rate model and Michaelis-Menton model were developed separately, based on principle of enzyme kinetics. Meanwhile the parameters were obtained by analysis of nonlinear estimation regression and multiple linear regression so that respiration quotiety (R.Q) and activity energy can be calculated, consequently, the maximum aerobic respiration rate could be gotten under any temperature, which is essential to the design of modified atmosphere package.
