摘 要:目的:通过牛奶生物发酵对肠道铁吸收率影响的实验研究,为高生物利用率补铁食品开发提供实验依据;方法:W istar雄性大鼠30只,随机分为实验组和对照组。大鼠以去铁基础饲料喂养3 d后,对照组经灌胃法给予含80μg55Fe的Na55Fe EDTA强化牛奶;实验组经灌胃法给予含80μg55Fe的Na55Fe EDTA生物发酵酸奶,用LS6500型液体闪烁计数仪检测粪便及血液、肝、脾等组织中55Fe含量;结果:实验组动物肠道55Fe的吸收率为(15.2±3.4)%;对照组为(11.0±3.2)%,两组差异非常显著(P<0.01);血液55Fe含量实验组为(0.92±0.37)mg/L,对照组为(0.76±0.29)mg/L,差异也非常显著(P<0.01);实验组肝和脾中55Fe含量虽高于对照组,但差异并不显著。结论:牛奶生物发酵能明显提高肠道铁的吸收率。Objective : To observe the effects of biological zymolytic milk on the intestinal tract absorptivity of iron in rats. Methods : Thirty male Wistar rats were randomly divided into control group and experiment group. The rats were fed basic diety without Fe for 3 days. Then rats in control group received Na^55Fe EDTA fortified milk by intragastric administration, while rats in experiment group received Na25 Fe EDTA zymolytic milk. The content of ^55Fe in feces, blood,liver and spleen was measured. Results :The intestinal tract absorptivity of 53 Fe in experiment group was significantly higher than that in control group (P 〈0.01), and the content of ^55Fe in blood was significantly different between the two groups. The contents of 22 Fe in liver and spleen in experiment group were higher than those in control group. Con- clusion :The biological zymolytic milk can increase the intestinal tract absorption of ^55Fe.
