摘  要:派类食品是一种夹层的蛋糕或包馅的蛋糕,由于它对卫生安全的要求很高,所以各生产环节、运输分配、销售的质量监控显得尤为重要。Along with the rapid development of food industry, food safety has aroused the general concerned with globalization. Present there are kinds of pies in the market, the security of them is very important. Therefore effective management and control on the pies security has great significance for ensuring the pies' quality. Manufacturers can administer quality supervision on process, distribution, sale etc by HACCP, then for CPs and no CCPs (Crucial Control Piont) we can apply other management system, such as GMP, ISO9000. So we can reduce the probability of food poisoning and other food source diseases occurring practically and effectively protecting consumer's health.
