摘　　要：高级醇是构成啤酒风味的重要物质之一。影响高级醇形成的主要因素包括原料、麦汁的组成、酵母菌种类和接种量、发酵条件、溶解氧浓度、发酵度和贮存期。High alcohols are one kind of the major substances contained in beer. The elements affecting the formarion of high alcohols include raw material, composition of malt liquid, sorts and quantity of yeast, fermentation condition, concentration of oxygen dissolution, fermentation degree and storage period.
