摘　　要：综述了植酸的性质及存在形式、制备方法、产品的标准及分析方法、在食品、医药、工业等领域中的应用状况,并对植酸的技术开发、生产以及实际应用提出了一些建议。Phytic acid is a kind of important natural organic phosphorus additive with wide application. Its properties, form of occurrence, preparation, product specification, analysis method and its application in food, pharmaceutical and other industrial fields are reviewed. Suggestions on its technological development, manufacture and practical application are presented.
