摘　　要：主要研究了玉米黄色素的稳定性。该色素耐光性、耐热性较差,对氧化剂极不稳定,对Al3+、Fe3+等离子稳定性较差,而对酸、碱、还原剂、食品添加剂及Na+、K+等离子较稳定。The stability of corn yellow pigment is investigated in this paper, and the results show that corn yellow pigment is very sensitive to oxidant, light,heat,Al^3＋ ,Fe^3＋ and so on, but stable for acid, alkali reductire., food additives and Na^＋ , K^＋.
