摘 要:为了解目前果品中硝酸盐和亚硝酸盐含量状况,从生态型产区随机抽取枣、西瓜和苹果3种果品共78个样品,用紫外比色法测定硝酸盐含量,用国标法测定亚硝酸盐含量。参比国内外食品硝酸盐含量分级评价标准对3种果品中的硝酸盐和亚硝酸盐含量进行了评价。结果表明:根据国家标准,西瓜和苹果样品硝酸盐全部合格,枣32个样品中有3个样品超标,超标率为9.4%;3种果品亚硝酸盐全部合格;参照沈明珠提出的蔬菜中硝酸盐卫生评价标准,西瓜和苹果均在轻度污染范围内,可直接生食,枣90.6%在轻度污染范围内,可直接生食,9.4%为中度污染,不宜生食,加工或熟食允许。对降低果品中硝酸盐含量的措施进行了讨论。In order to determine the content level of nitrate and nitrite in fruit,78 samples were collected from 3 kinds of fruits, Chinese jujube, watermelon and apple. The contents of nitrate and nitrite were determined with ultraviolet colorimetry method and national standard method respectively. The food safety of the three fruits was evaluated according to the domestic and international hierarchical criterion on the maximum residual limit (MRL) of nitrate. The results showed that the contents of nitrate in watermelon and apple and nitrite in all samples did not exceed MRL (according to national standard). In Chinese jujube only 3 among 32 samples did not reach the standard with 9.4% of unqualified rate. According to the vegetables nitrate hygiene evaluation criterion that Shen Mingzhu put forward in 1982,al1 the watermelon and apple examined were within the range of slight pollution and could be eat raw directly as well as 90.6% of Chinese jujube. The rest of Chinese jujube were within the range of medium pollution, unsuitable to eat raw,but suitable to eat after processing or cooking. The measures for reducing the content of nitrate in fruits are discussed.
