摘 要:在青岛胶州湾沿海采集样品,对样品进行分离、纯化后获得300株海洋链霉菌,从中检测到一株高产蓝色素的海洋链霉菌M259。本文主要探讨该菌产生的蓝色素的理化性质,研究发现该蓝色素对八株受试菌无抑菌活性,在590nm处有最大吸收峰,水溶性好,光热稳定性强,而且具有耐糖、耐还原性,酸性条件下为红色,碱性条件下为蓝色,对大部分金属离子和食品添加剂稳定,经急性毒理实验证实为实际无毒物质。300 strains marine Streptomyces were isolated and purified from the samples, obtained from Jiaozhou Bay, Qingdao. Marine Streptomyces sp. M259 is one of the 300 strains marine Streptomyces, a high yield blue pigment produce. This paper mainly describe the fermentation and extraction methods of the blue pigment, and the results of our experiments showed that the blue pigment has no antibacterial activities to the eight microorganisms and the absorption peak is at 590nm. Moreover, it can be well dissolved in water and the color of blue pigment solution is red in acidic condition and blue in alkalescent condition. The effects of light, temperature, sugar, reducer, metallic ions, and food additives are inconspicuous on blue pigment stability. The poisonous experiments confirmed that the blue pigment is an actually innoxious substance and can be safely applied in industrial production.
