摘 要:以龙葵果为原料,研究了不同树脂对龙葵果紫红色素的吸附率和解吸效果,及不同洗脱剂的洗脱效果,确定了用树脂法提取龙葵果紫红色素的工艺,并对用该工艺提取的龙葵果紫红色素的性质进行了检测。结果表明,AB-8树脂对龙葵果色素的吸附和解吸效果较好,用体积分数50%乙醇洗脱100 m in得到的产品质量较好,树脂法提取的龙葵果紫红色素色价为35,产品收率为12.6 g/kg;AB-8树脂重复使用20次后吸附率仅降低1.45%;树脂法提取的色素水溶性好,在酸性条件下具有较好的稳定性,有一定的耐光性,在80℃以下热稳定性较好,且对低浓度的常用食品添加剂比较稳定;N a+,K+,C a2+,M g2+和Zn2+对色素液无影响,但C a2+,A l3+对色素液有增色作用,F e3+对色素液具有变色作用;氧化剂H2O2和还原剂N a2SO3.7H2O均会加速色素的降解。Taking Solanurn nigrurn as raw material,the different resins to the Solanurn nigrurn purplish red pigment adsorption rate and the desorption effect ,and the elution effect of different eluents were studied,and the technology of extracting purplish red pigment from Solanurn nigrum with resins was determined,and the preperties of the purplish red pigment was checked. The results showed that AB-8 resin had better adsorption and desorption effect on the Solanurn nigrum purplish red pigment. In the course of desorbing the absorbed pigment for 100 min,50% ethanol was optimal,the colority E (1%,540 nm) was 35 and the product receiving rate was 1.26%. AB-8 resin was selected during the experiment, After repeating 20 times,the absorption factor had only a loss of 1.45%. Under this extraction condition,the pigment dissolved in water,but it was stable in acid solution. The light ,heat lower than 80 ℃ and low density food additions also had no evident influences on its stability,Na^+ ,K^+ ,Ca^2+ ,Mg^2+ and Zn^2+ have no influence on the pigment fluid, but Cu^2+ and Al^3+ had the function of adding colour to the pigment fluid,Fe^3+ could change the colour of the pigment fluid;Oxidizer H2O2 and reductant Na2SO3 · 7H2O could speed up the degeneration of the pigment.
