福建省群体性家宴食物中毒发生特点及防治对策

摘　　要：为掌握群体性家宴食物中毒的发生规律,作者对福建省1997～2005年群体性家宴食物中毒的情况进行分析。统计结果表明,福建省群体性家宴食物中毒的发生率呈逐年上升趋势,中毒92起,中毒人数2473人,死亡1人,6～9月份为中毒的高发期,引起中毒的主要食品是动物性食品,主要致病因素为微生物,中毒的主要原因是原料污染或变质。今后应改变群体性家宴的卫生监督管理的监督管理方式,逐步建立农村家宴申报制度,大力开展预防食物中毒的宣传和培训。In order to understand the occurrence pattern of food poisoning in household dinner, weanalyzed the cases of food poisoning happened in Fujian province durig 1997- 2005. The statistical results indicated that the occurrence rate increased by time in household dinner, with 92food poisoning cases, 2473 persons were involved, 1 death. Food poisoning occurred mainly in meat food, by microorganisms in contaminated or spoiled raw materials. It is necessary to change the way health inspection committed in household dinner, establish the permit system, and enhance the propaganda and training for preventing food pinioning.
