摘  要:通过对河蚬软体部分营养成分分析,综合评定其营养价值.结果表明:河蚬软体部干样中,粗蛋白、粗脂肪、灰分含量分别为63.33%、10.91%、6.29%;必需氨基酸占氨基酸总量的39.10%,各必需氨基酸中平均氨基酸分为88.9,第一限制氨基酸为Leu(1973年FAO/WHO标准);并富含钙、钠、钾、铁等无机元素.认为河蚬是一种营养价值较高的贝类.The nutritive compositions in the soft part of Corbicula fluminea were analyzed. On the basis of dry matter of soft part, the contents of protein, lipid and ash content were 63.33 %, 10.91%, 6.29 % respectively. The compositions of amino acids were determined to be as 451.1 mg per gram of dry matter, in which the content of essential amino acids was 176.4 mg/g, making up 39.10% of total amino acids. The average score of amino acids in all essential amino acids was 88.9. The first limited amino acid was Leu according to the FAO/WHO standard (1973). Some mineral ions such as K, Na, Ca, Mg, Zn, Cu, Mn and Fe were determined and the results showed that Corbicula fluminea was rich in Ca, Na, K, Fe and Zn in the edible soft part. In conclusion, Corbicula fluminea is one of shells with better nutritive value.
