摘 要:以甜茶、苦丁茶、茉莉花茶以及北冬虫夏草混合发酵液为原料,研制出北冬虫夏草保健茶饮料。对三种茶的浸提条件以及北冬虫夏草液体发酵条件进行了研究,通过正交实验对饮料茶的外观进行了感官检验,确定了北冬虫夏草保健饮料茶的最佳配方,同时对其褐变进行了研究。结果表明,当Vc添加量为0.05%时,该饮料茶的最佳配比为:甜茶浸出液30、茉莉花茶浸出液20、苦丁茶浸出液3、北冬虫夏草混合发酵液30。Corduceps militaris health tea beverage was developed using Rubus suavissimus, Ilexlutifolia thumb, Jasmine tea and the mixed fermentation broth of Cordyceps militaris as the raw materials. The paper studied the soaking conditions of the three teas and the fermentative conditions for the Cordyceps militaris. Orthogonai tests were used to evaluate the appearance of the tea beverage. The optimum formula for the tea beverage of Cordyceps militaris was decided. The browning of the tea beverage was simultaneously researched. The result showed that when the added quantities of Vc was 0.05%, the optimum formula was:the Rubus suavissimus extract 30, that of Jasmine tea 20, that of Ilexlutifolia thumb 3 and that of the mixed fermentation broth of Cordyceps militaris 30. The health tea beverage had best flavour and health function.
