摘　　要：从餐饮管理专业人才培养目标入手,提出为了实现高职高专对餐饮管理专业人才的培养目标,高职院校必须构建新的培养模式,有针对性地改革其教学体系、课程结构、教学内容、教学方法、考核体系等,以适应社会对高等技术应用型餐饮管理人才的需求,为社会培养出更多的实用型专门人才。The food and beverage service skill is one of important technical abilities that Specialized students of travels manage or hotel manage must grasp skillfully. The teaching of this course must take market demand as the direction, and we should reform its course structure, the content of courses, teaching method and examine system, etc. , pointedly in order to meet the society demand to advanced food and beverage service and the managerial talent＇s and train more practical specialized talents for the society.
