摘  要:超氧化物歧化酶是体内自由基主要清除剂之一,简称为SOD。本文以树莓为原料,对树莓SOD的理化性质进行研究,即SOD敏感性实验,最大紫外吸收峰和温度、pH值及金属离子等因素对SOD的影响,为树莓SOD的进一步深入研究及其在药品、保健食品和化妆品的应用打下基础。三种酶(SODⅠ,SODⅡ和SODⅢ)均对KCN和H2O2不敏感,说明这三种酶都属于Mn-SOD;其最大紫外吸收峰均为280nm;温度对其影响相对稳定,SODⅢ受温度的影响稍大些,而SODⅠ和SODⅡ受温度的影响较小;在pH7~9范围内SOD相对酶活力较高,pH过高或过低SOD均易失活;三种SOD受金属离子的影响没有很大的差异,Al3+、Cu2+、Mg2+、K+、Ca2+、Zn2+都具有一定程度的激活作用,而Pb2+、Fe3+、Sn2+则具有非常明显的抑制作用。Superoxide dismutase (SOD) is one of the important purger eliminate O2- out of body. Studying the physical and chemical properties of raspberry SOD, the researches included the sensitive experiment of SOD, the maximal ultraviolet peak of SOD and the effect of pH value, and metal ion on SOD from the raspberry had been done. All above work provided foundation for further researches of SOD and its application in medicine, health food and cosmetic. Coming to a conclusion, SOD Ⅰ ,SOD Ⅱ and SOD Ⅲ are identified as Mn-SOD because they are not sensitive to KCN and H2O2;The maximal ultraviolet peak of SOD is 280 nm. The effect of temperature is steady, but temperature effect on SOD llI is greater, that of SOD Ⅰ and SOD Ⅱ is little. The specific activity of SOD is high in pH value range from 7 to 9and SOD activity easily lose under too high or too low pH value. The effect of metal ion on them shows no difference. The three SOD are stimulated by Al^3+, Cu^2+. Mg^2+, K^+, Ca^2+, Zn^2+and restrained by Pb^2+, Fe^3+, Sn^2+ clearly.
