摘 要:[目的]了解四川省都江堰地区长寿老人饮食及相关行为特征。[方法]对四川都江堰地区867名90岁及以上老年人(长寿老人)进行有关膳食和饮食行为方面的现况调查。[结果]调查对象中,每日固定3餐者占88.8%,就餐时间固定者占51.0%,每餐食量为7~8分饱者占80.8%,膳食搭配以素为主者占78.9%;每天都吃主食和蔬菜者占95%以上,每周至少吃1次畜肉、水果、豆制品和蛋类者占50%以上,从不吃鱼虾类、奶类及坚果类的比例分别为48.7%、79.4%和70.1%。[结论]四川省都江堰地区多数长寿老人进食较规律、食量有所控制,但食物种类相对单一,以植物性食物为主。[Objective]To investigate and analyze the dietary behaviors and diet pattern for the elderly population aged above 90 years in Dujiangyan area of Sichuan.[Methods]867 individuals aged 90 years and over were selected from 21 counties of Dujiangyan area.The subjects were interviewed by a questionnaire to collect the data of their dietary behaviors,meal habits,dietary pattern and so on.Food consumption of subjects during recent one year was surveyed by food frequency method.[Results]88.4% of subjects had regular three meals per day, 51.2% of them had stable meal schedule, and 79.8% of them consuemd 70%-80% of full amount per meal,77.6%consumed the diet which mainly consist of plant foods. More than 95% of subjects ingested cereale and vegetables everyday, and more than 50% of then, intook pork, fruits, beans and eggs one time Furthermore the rate of subjects who had never intaken fish/shrimp, dairy and legume were 46.1%, 75.3% and of 66.4% respeetively.[Conclusions]Most of this population have regUlar meal arrangement, and consume limited food species and intake, The main part of their diet is plant foods.
