摘  要:采用体外消化模拟方法,研究了抗性淀粉在人工胃肠液和大肠液中的消化吸收情况,并用原淀粉作为对照组。结果表明,抗性淀粉和原淀粉在生理盐水中均没有被分解,生理盐水对抗性淀粉的消化毫无影响。与对照组原淀粉相比,抗性淀粉在人工胃液(pH3、pH4、pH5)和人工肠液(pH6.8)中变化很小,人工胃液和人工肠液对抗性淀粉不起消化作用。抗性淀粉在大肠液中有明显的失重,说明大肠液对抗性淀粉有影响,抗性淀粉能够被大肠中的微生物发酵或部分发酵。从而说明抗性淀粉不能在胃和小肠中消化吸收。The digestion and absorption of resistant starch and natural starch in artificial gastric juice and intestinal juice were studied by means of in vitro digestion. Natural starch was used as the control. The results indicated that resistant starch and natural starch were not degraded under the conditions of physiological salt solution. Physiological salt solution had no effect on the digestion of resistant starch. Compared with the control group, resistant starch had little changes in artificial gastric juice (pH3, pH4, pH5) and artificial intestinal juice (pH6.8). Artificial gastric juice and intestinal juice did not digest resistant starch. Resistant starch had obvious weight loss Jn large intestinal juice, and showed large intestinal juice had effect on resistant starch. Resistant starch could be fermented or partly fermented by microorganism in large intestine. It could be concluded that resistant could not be digested and absorbed in stomach and small intestine.
