摘  要:大麦苗含有丰富的叶绿素、蛋白质、。维生素、矿物质及活性酶,有减肥、降脂、抗氧化的功能,是极有价值的珍品。麦苗汁中含较多的钾、铁、锌、硒和锰等矿物质元素,以及多种人体必需的氨基酸,特别是赖氨酸含量可达到4.19g/kg。The formula of materials and the technical conditions of fermentation of green barley juice nutritious healthcare yoghurt are optimized by single and orthogonal experiments. The quality of product is evaluated. It is proved flint the optimum focmula is 5% bariey juice,6-7% Oligomate 55,0.2% PGA, 4% sugar and 3% skimmed milk powder in raw milk. And the best condition of fermentation techoics is 43,5 h. The product is proved to be in good sensory quality,stabilization,which has the essential nutrition to health.
