摘 要:目的考察姜油树脂/β-环糊精(β-CD)包合物的稳定性。方法分别对姜油树脂/β-CD包合物和混合物进行10 d高温(40℃、60℃、80℃),高湿(RH 75%、92.5%)和强光(4×103lx)的实验。用紫外分光光度法测定总姜酚的残留量。结果在温度、湿度和光照的条件下,包合物中总姜酚的含量显著高于混合物,配对t检验表明,二者具有显著性差异(P<0.05)。结论姜油树脂形成包合物后稳定性显著地提高。OBJECTIVE To compare the stability of Ginger oleoresin/β- CD inclusion complex with Ginger oleoresin. METHODS The stability experiment was carried under the storage conditions of high temperature (40℃, 60℃, 80℃ ), high humidity ( RH 75%, 92.5% )and high light (4 ×10^3 lx). The contents of total gingerol were measured by ultraviolet spectrophotometry. RESULTS When they were stored under above conditions for 10 days, the stability of Ginger oleoresin/β - CD inclusion complex was obviously higher than that of mixture, and exhibited significant difference by paired sample T - test ( P 〈 0.05). CONCLUSION The β - CD inclusion complex could obviously increase the stability of Ginger oleoresin.
