摘　　要：本文以跨文化和大时空的视野审视云南饮食文化，认为云南作为“中华民族饮食文化圈”西南区域的重要地域文化构成，有五大特征是突出的：一是饮食文化发轫历史的久远，迄今为止，元谋猿人用火熟食的记录仍然是中华饮食文明史上最早的。二是饮食文化生态的独特，以无数珍贵茵类为代表的植物性食物原料的大量存在与有效利用，形成举国、甚至举世闻名的饮食文化特色与优势。三是众多少数民族饮食文化荟萃的民族饮食文化乐园，同样是举世闻名的特点与优点。四是中国与东南亚饮食文化交流的通道地位是独特和不可替代的。五是拥有国际性认知的旅游胜地资源与声誉，对海内外旅游者有巨大而持久的吸引力。云南饮食文化有悠久和丰厚的积淀，有雄厚的物质基础，有良好的声誉，有无数的成就积累，有足够的人力与人才资源，具有了发展饮食文化大省的基本条件。如果能解放思想、高瞻远瞩、成功谋划、全力运行，云南人所期待的文化产业的繁荣发达，是完全可以实现的近期目标。The article is to survey Yunnan＇s dietary culture from the view of space - time and transculture and it thinks that Yunnan;s dietary culture as the important part of southwest area of dietary cultural circle of the Chinese Nation have five outstanding characters, The first character is that its history of dietary culture was far long. So far it is the pioneer in the Chinese dietary cultural history that Yuanmou ape - man used fire to cook food. The second character is the inimitable zoology of dietary culture. Abounding and using effectively vegetal edible raw materials such as countless rare funguses form the famous character and advantage of dietary culture in the country and even in the world. Third, it is also the national paradise of dietary culture because it gathers together multitudinous national minorities＇ dietary culture. This character is also world - famous. Fourth, the station is particular and not to be replaceable as the channels of dietary cultural exchange between China and Southeast Asia. The last, Yunnan owns the tour wealth and fame that is cognized in the world as the famous scenic spots and has great and long appeal to tourists all over the world. Yunnan＇dietary culture has centuries - old and rich accumulation, abundant matter basic, well fame, unnumbered achievements, enough local talents and human resources so it has the basic conditions to develop the dietary culture. If we can liberate thought, look far ahead and aim high, design successfully and run well, Yunnan must realize the expectant goal the glory and upgrowth of cultural industry.
