摘　　要：对经大孔树脂AB-8分离纯化的月季花色素的光谱特性、溶解性、稳定性进行了分析。结果表明:月季花色素最大吸收波长是366nm;不溶于非极性有机溶剂,而溶于强极性溶剂;对光、热、还原剂不太稳定;对酸碱、氧化剂比较稳定;常见金属离子中,Fe2+、Cu2+、Al3+对其有很大影响。Spectrum and stability of the rose flowers pigment were studied. The results showed that the largest absorption was 366 nm. The rose flowers pigment dissolved in polar solvents, but didn＇t dissolve in unpolar organic solvents. It was not stable to light, temperature and reduction, but it was resistant to acid and alkali, oxidants. The pigment was sensitive to Fe^2＋, Cu^2＋, Al^3＋.
