摘  要:样品以70%乙醇提取,采用反相高效液相色谱分离,色谱条件:色谱柱ZORBAX SB C184.6mm×250mm,5μm;流动相为甲醇-水(体积比70:30);流速0.8mL/min;UV230nm检测;进样量20μL。以外标峰面积法定量辣椒素(C)、二氢辣椒素(DC)、去甲二氢辣椒素(NDC),结果以斯氏指数(SHU)计:NDC的色谱行为与C极其类似,NDC采用C的标准曲线定量。C和DC的RSD分别为1.0%、1.5%(n=5);平均回收率分别为97%、96%:C和DC在0.001~0.1g/L范围内线性良好;检出限(LOD)为0.1mg/L,定量下限(LOQ)为0.5mg/L。方法满足辣味水平评价要求。A method was developed for the determination of eapsaieinoids in highly water-bearing pepper products by high performance liquid chromatography. The sample was extracted with 70% ethanol. The extract was separated on a ZORBAX SB C18 column(250 ×4. 6 mm, i. d. 5 μm) at 30℃ , which was then eluted with 70% MeOH aqueous solution at a flow rate of O, 8 mL,/min, The UV detection was at λ230 nm With the external standard method, the linear range of the plots of the peak area versus the concentration for eapsaiein ( C ) , dihydroeapsaiein ( DC ) and nordihydroeapsaiein ( NDC ) , respectively were in the range of O. 001 -0. 1 g/L with a correlation coefficient of 0, 999 8, The determination results were presented in Seoville heat unit. Since the chromatographic behavior of NDC and C were similar, NDC could be determined using the plot of C, The limits of detection and limits of quantification for C and DC were 0, 1 mg/L and 0. 5 mg/L, respectively. The relative standard deviations for C and DC were 1.0% and 1.5% respectively(n =5)and the average recoveries were 97% and 96% respectively, Based on the developed method, the pungency level for the pepper products could be measured accurately,
