摘  要:以武定鸡快羽系(产白壳蛋)作对照,对武定鸡绿壳蛋系进行了蛋品质分析。结果显示,绿壳蛋系的蛋重极显著低于快羽系(P<0.01),而蛋壳重极显著高于快羽系(P<0.01);绿壳蛋系蛋的蛋壳厚度、蛋白高度、哈夫单位、蛋黄相对重以及蛋中蛋白质、脂肪、维生素D、维生素B1和镁、锌、磷、钙的含量显著高于快羽系(P<0.05);其氨基酸总量以及天门冬氨酸、苏氨酸、谷氨酸、异亮氨酸、赖氨酸、精氨酸的含量也显著高于快羽系(P<0.05)。表明武定鸡绿壳蛋系具有很高的营养价值,蛋品质优良。In this paper, the egg quality of Green-shell line was analysed by using that of fast-feathering line as control ( these two lines all were breeded from Wuding chicken, a famous Yunnan aboriginal chicken breed). The results revealed that egg weight of Green-shell line was lower significantly than that of fast-feathering line(P 〈 0.01 ). And the egg-shell weight of Green-shell line was higher significandy than that of fast-feathering line(P 〈0.01 ). For the eggs of Green-shell line, the value of eggshell thickness, egg white height, Haugh unit, relative weight of egg-yolk and, the content of protein, fattiness, vitamine D and B1, and the mineral element, such as magnesium, zincum, phosphorus, calcium, were entirely higher remarkably than that of fast-feathering line' s eggs( P 〈 0.05 ). The amino acid gross content and the contents of aspartic acid, threonine, glutamic acid, isoleucine, lysine and arginine for the eggs of Green-shell line, were also higher markedly than that of the eggs of fastfeathering line (P 〈 0.05 ). The results indicated that there was high nutrient value for the eggs of Green-shell line chicken and its egg quality was excellent.
