Referring to the newest research results in recent 5-6 years, the article has summarized the definition, ingredients and determination of dietary fibres as well as its physics and chemistry characteristics, physiological health functions, proper recommendation quantity, and application and developing prospects, which has great value of reference for people' s generally understanding the rdafionship between dietary fibres and human health.
