摘  要:主要通过单因素实验研究了碱法提取大米蛋白工艺,并且采用响应面法对提取时间、水料比和碱液浓度等参数进行了优化。采用多元二次回归方程拟合了三种因素与提取率的关系;预测最佳提取条件为NaOH质量分数0.35%,提取时间2.3 h,水料比7.8,经实验验证,其结果与之基本吻合。通过喷雾干燥,得到大米蛋白粉成品。The alkaline extraction of rice protein was studied by a single factor experiment. The extraction time, liquid-solid ratio and extraction time were optimized by response surface method. The relation between three factors and extraction rate was fitted by means of multiple quadratic regression equation. The experimental optimum conditions of NaOH 0.35 % , extracting time 2.3 h, liquid- solid ratio 7.8 were pre-determined. The experiment approved that the results were consistent with the predicted values. The finished product of rice protein was obtained through spray drying.
