摘  要:双歧杆菌是一种对人体健康有重要意义的益生菌,将双歧杆菌与日常饮用的啤酒有机的结合,制成益生啤饮。通过实验筛选出了双歧杆菌的最优培养基与最适培养条件,将经厌氧培养的双歧杆菌制成休眠细胞,与适量的休眠剂乳酸链球菌素同时加入啤酒中使啤酒在不失本来口感的前提下同时具有补充肠道有益菌群的保健功能。Bifidobacterium is a kind of beneficial bacterium that plays an important role in health protection. Bifidobacterium combined with common beer in this paper, which produced beer that is good for health. The optimum culture and the optimum culture condition can be choosed by experiment. The resting cell of bifidobacterium obtained with anaerobic cultivation and appropriate nisin were simultaneously added into beer, consequently this kind of beer-possessed health care, which complemented the beneficial strain in the intestines and didn't lose primitive taste at the same time.
