摘  要:[目的]找出施加不同添加剂复烤对烟叶品质的影响规律。[方法]在复烤前对烤烟叶片进行加清水(对照)、单加酶、单加料和酶与料液混施4个处理,研究不同处理复烤后的烟叶样品的常规成分、香味成分和感官质量。[结果]各处理烟叶样品的总糖、还原糖、糖碱比和糖氮比均较对照有所提高,且酶与料液混施复烤和单加酶复烤的烟叶样品的增幅高于单加料复烤烟叶样品。酶与料液混施复烤、单加酶复烤的烟叶样品的香味成分和棕色化产物类香味成分的含量,明显高于对照和单加料复烤烟叶样品。单加酶复烤能改善香气,降低杂气、劲头和浓度;单加料复烤可改善余味;酶与料液混施复烤能综合提高烟叶的感官质量和内在品质。[结论]施加添加剂后复烤的烟叶样品内在化学成分趋于协调,评吸质量得到提高,而施加酶与料液混合制剂复烤效果最好。Objective The research aimed to find out the laws on the effects of adding different additives before redrying on the tobacco leaf quality.Method 4 treatments of adding clean water(CK),adding enzyme singly,adding material singly and applying mixed material with liquid were conducted on tobacco leaves before refrying to study the conventional components,aroma components and sensory quality in refried tobacco leaves after different treatments.Result Total sugar,reducing sugar,the sugar-nicotine ratio and the sugar-nitrogen ratio of the tobacco leaf samples in each treatments were increased than that of CK and the increasing amplitudes in tobacco leaf samples with applying mixed material with liquid before refrying and that in tobacco leaf samples treated with adding enzyme singly before refrying were higher than that in tobacco leaf samples treated with adding material singly.The contents of aroma components and browning product aroma components in tobacco leaf samples treated with applying mixed material with liquid before refrying and in tobacco leaf samples treated with adding enzyme singly before refrying were obviously higher than that of CK and that in tobacco leaf samples treated with adding material singly.Adding enzyme singly before refrying could improve the aroma and reduce offensive odor,physiological strength and concentration.Adding material singly before refrying could improve the remaining taste.While applying mixed material with liquid before refrying could increase the sensory quality and the inherent quality of tobacco leaves comprehensively.Conclusion The chemical component in tobacco leaves samples treated with adding additives before refrying tended to be harmonious and its smoking quality was increased.And the effect of adding mixed preparation of enzyme and material liquid was best.
